Almond and Forest Apple Crumble (gluten & refined sugar free)

For 4-6 servings:

Take 5-6 peeled, cored, sliced medium apples. Stew in a little water along with  ¼ stick cassia bark (or cinnamon) 3 cloves, 3 crushed green cardamom pods, and 2-3 teaspoons maple syrup (you can use agave, xylitol or honey – adjust to your own taste, we’re not fans of cloyingly sweet) If apples are a sweet dessert variety, omit the sugar.

Take 1 cup of almond pulp left over from making plant milk

Add approx ¾-1 cup gluten-free oats, ½ tsp mixed spice, ½-1 tbsp xylitol, 1 tbsp softened coconut oil and rub ingredients together.

Place apples in Pyrex dish. Add topping. Press down well.

Cook in moderate oven for 20-25 mins.

Fabulous at any time of day, especially brekkie … it will keep your blood sugar-levels even – and it tastes delicious!
